Yeast converter

Swap fresh yeast for dry yeast, or instant for active dry, in grams, packets, teaspoons and cubes.

7g instant

That's about the same as one bread loaf. That raises about 500 g of flour in a same-day bread dough.

What it means

How much yeast is that?

Rough equivalents: brands, the age of the yeast and the dough change things. Dissolve active dry yeast in warm water first; instant can go straight into the flour.

Background

About yeast types

All three are the same organism, Saccharomyces cerevisiae, sold in different states. Fresh yeast is about 70 % water, so you need roughly three times as much as instant. Active dry has larger granules with more dead cells on the outside: use about a quarter more than instant.

A US packet or European sachet holds 7 g (2¼ teaspoons), enough for a loaf made with 500 g of flour.
